Any ideas as to why you move from D to neutral directly but to move between D and S modes you have to hold the button in on the gear change? I would have thought it would make sense to have the button safeguard for neutral as well.

Can't say I've ever noticed. Maybe because D to N is purely mechanical but D to S is electronic engaging a different engine/DSG computer program with different rev ranges etc:.
 
Could it just be a historical safety thing - going into N could be done easily to disengage drive if the driver or vehicle was in trouble... all other changes into a driven mode require button press?
