Folding in the sides of the roof

Is there a recommended way to close down the roof without bunching up the side wall?
 
Depends on witch way your roof closes , as in witch Cali you have, since we can not see any verhicle details in your avatar.
 
Main thing is to have your sliding door open for the displaced air to escape.
I don't use a bungee and have never had anything other than perfectly folding canvas walls

I agree with the air displacement and would add that you want a door or windows open on the opposite side to where the winds coming from. You don’t want the wind blowing in.

It's a T6 Beach. I always have the windows open. My problem is the material side bunching up where the clips are. I am frightened of damaging the material.

I fold and roll back, making sure that the black webbing behind the clip is protecting the material so that you can't pinch it..

Yes, the bungee is useless for any manual roof.

Might be lost in translation @Romke but the bellows bungee works brilliantly on my Beach? It needs to be set up with the right amount of tension, but that's very easy to do.
 
Never used a Bungee, on our second Cali, the T6 folds better than the 5 but you get into a routine and no issues.

Hard to say. I was a bit skeptical when I fitted ours but it's just some extra insurance against the scissors mechanism wreaking havoc. If it was too tight it would still do the practical / useful bit of making the roof fabric collapse inwards when you lower the roof. Too-loose however and it won't pull the fabric in to the centre.
 
Nothing beats the mark 1 eyeball.

Get the roof 3/4 lowered and just take a walk around the van to make sure all is folding in nicely, clearing the scissors mechanism and nothing is going to get trapped.

If a really blustery day with wind coming in all directions then take an extra walk round.

Most times it will fold in as designed to, just once it may not.

Or two, three or four visual checks! I am in and out of the cab when putting the roof down, walking round. Think people must think I am nuts :)
