I tested the pizza stone on our new Cadac Safari gas (we changed from the Cobb with stones). Made from ground up, ecological and glutenfree.

I even got so excited about baking in the Cadac, that I ordered and mounted a thermometer from a Weber in the lid, wish I found was a brilliant idea, until Iben asked why I had ruined the Wok!? Well, there is always more than one perspective on things … and we are one Wok down :headbang

My favourite Cadac recipe from this year's summer trip was a sausage stew, made from some excellent country sausages in the Lozere region in France.
  1. Use the slotted grill to sear the sausages, set aside and chop into 1cm pieces.
  2. Use the upturned lid to gently soften a chopped onion, garlic, bell peppers x 2
  3. Add tomato puree, can of chopped tomatoes, white wine, bay leaf + herbs
  4. Simmer on lowest setting, with flat grill as lid, for 15 mins
  5. Add small potatoes, or larger ones chopped up
  6. Simmer for additional 45 mins until potatoes about to fall, season & serve with crusty bread + wine. :)
Sorry, no photos, but the smell has surrounding campers bending their necks every time!
 
Seasoned chicken sticks with Tomato Salad

  • Chicken breast
  • Lemon
  • Seasoning
  • Tomatoes
  • Peaches (Not too ripe)
  • Red onions
  • Mozzarella Cheese
  • Pepper fruit
  • Basil leaves
  • Olive Oil
  • Salt / Pepper
  • Bamboo sticks

Cut the skin- and boneless chicken breasts into chunks.
Put in an airtight canister or plastic bag.
Ad Lemon juice, and preferred seasoning (Garam marsala i.e is delicious)
Let set and soak while cooled for a while (hours if available)

Have a sip of wine

Rinse and cut tomatoes and peaches in slices/pieces
Cut Mozzarella into slices
Clean the red onion and cut into very very thin slices
Put a layer of tomatoes and peach pieces in a suitable plate
Top with mozzarella and the thin red onion slices
Top with an appropriate amount of dressing of Olive oil, lemon juice, salt and pepper.
Finish with some Basil leaves just before serving

Have a sip of wine

Rinse Pepper fruit and cut into 3-4 pieces
Put the chicken chunks on bamboo (or other) grill sticks.
Grill the sticks, when half done, put the Pepper fruit on the grill and grill until all is finished.

Violá - Serve and enjoy!

TIP 1: Make sure your grill is hot before starting, and don't burn your food. Turn it accordingly.

TIP 2: If you need more food, a good supplement is Pasta with pesto or some Corncobs.

Your recipe looks fantastic, we will definitely give that a try!! I find with a bit of adaption almost anything can be cooked on a cadac. We love kedgeree, capanata and recently branched into flat breads and currys.
