I've seen a few people create a storage area using grey elastic in the void behind the drivers and passengers seats.

The problem? I can't find any suitable "buttons" of fixings.

I disagree that this looks more professional, plus you have protruding fixings that may catch on things. Drill some holes, thread the elastic through an tie a knot. Much neater and VW looking in my opinion.
 
@liaoyang thanks for the kind offer. They are a little large at 25mm diameter for what I need. 10mm is more appropriate but at least I can try to look for a "10mm trailer hook, tie down cleat"

EDIT:
The M5 Drill hole cover caps are only 5mm long so too short
The 10mm screw hole cover caps are, again, too short.
The decorative cap leaves too much screw exposed and even when glued on to the screw easily becomes dislodged

..... back to the drawing board :sorry

These fittings are commonly used on kayaks and are very good for some purposes (though the elastic can be prone to leaping off off pulled too far off-axis). Try https://h2okayaks.com/products/surface-mooring-deck-fitting-pack-5

The only thing to be aware of is that there is very limited space behind these panels in some places so fixing a nut/bolt becomes tricky. I actually set some pad eyes (again, kayaking hardware) into the sides of the recess and used pop rivets from the inside so they sat flush.

Very satisfying when done!
