Is it possible to drive a California with the pop top open?

Yes no problem. (Assuming you're talking about moving it very short distance at very low speed, and not on a public road).

The van will beep at you if you do! But it won’t stop you doing it. Can be done to reposition yourself on a pitch, for example.

Is it possible? Yes. Is it a good idea? No. Is it recommended? No

I would guess this could in do some damage to the 'arms' that hold the roof up. Especially in sideways directions.
