I have a deposit on a T.6.1 (2023) with a 2.0 bi turbo (DMZA) engine? I've spent most of the day reading horror stories about earlier versions of this engine?
Should I walk away or take the gamble?

I'm assuming that you've researched the leaky canvas also for the MY 23?

Why is it a gamble?

The internet is full of any story you like when you dig around.

What is more useful is the actual failure rate and the condition of the van and servicing.

I just returned from a 2600 mile trip through Germany, Italy, France, Belgium and Holland and the 204 PS engine didn't skip a beat. A real mile muncher.
As dspuk said, judge it on its own merits.

It's low mileage 7k with VW service history... since the change to the the DMZA engine configuration and general age of vehicles out there I'm assuming very few issues have surfaced to far...

Assuming the engine mentioned is the 204, same as @Corradobrit, mine is a 22 and never missed a beat either.

Most people go online to complain. Not many go on and say “I have that engine and it’s fine”.

2023 you also have a year of factory warranty left.

Mine is a 2016 with 145.000km and no issues whatsoever.

Have a MY2022 with this engine for almost 3 years now and done 40.000km (25k miles) with it and no concerns at all. No oil use or other concerns.

Did 48,000 miles in mine never missed a beat. Did a lot of towing with it as well. The issues were with the last of the T6.0 and the first releases of the T6.1 if I recall correctly so well before 2023.

Just get service/warranty package when the 3 year cover runs out & you'll be OK until 2029
