Looking to buy a T5.1 Beach, what’s your ideal spec?

I have a 3 seater bench beach, great for sleeping downstairs and 7 seats. However I removed it sometime ago as I don't need 7 seats now have 4. Without it in it is easy to move around the inside can put things in behind the seats and walk though to the back if needed. Last week I parked in a car park and nearly had to get into the van via the rear door as cars parked too close to both sides.
I think you may have difficulty getting a second-hand 3 seater bench version so unless you need 7 seats don't get put off by a 2 seat bench. If you find you need the van to transport big things it should be easier to remove a 2 seat bench as it is lighter than the 3. The 3 seat bench does have the advantage that you can sit the kids with a gap between them.

Retrofitting a tow bar is expensive so if you can get one ready fitted than I would chose that. Removal is great no walking into it. Also in France it has to be removable so if you plan to go there then removable is essential. Also diesel heater is great I am going out today I will put it on for 10mins before I go so I have a warm van to get into.

If you have a tow bar you can put a bike rack on that so don't worry too much about a bike rack coming with it. The van is shorter without the VW fitted bike rack therefore shorter for parking and ferries. However if you want to tow a boat or caravan and take bikes you may be better off with the VW one.

I would like to have a opening window in the sliding door as well as the side wall.

Personally I find the beech is great for me as I cook on an induction hob and always stay at sites with washing up facilities so I find on need to have a fitted kitchen. Good luck with your search and hope you can get what you want, I am sure you will enjoy using it.
With regards to a Removable Tow Bar in France. This might be a legal requirement for French registered vehicles but is NOT for UK registered vehicles travelling in France.
