After much planning and reading up I managed to wire in this solution, which allows:

I then made a small wooden box to house the DC-DC converter, which includes a 12v on/off control which I wired to the relay and the power station "car port". This box is secured to the floor through a connection to the rails.
Then into the power station I have the positive coming directly from the alternator with a negative coming from the rear leisure battery via the solar input. I drilled holes into the rear leisure battery cover to run the negative plus the 240v cable. I figured this panel was easily replaceable so best to make a hole here rather than anywhere else.
The 240v cable comes down from behind the hook-up isolator panel, this panel was tricky to remove and tap into but I got there eventually. The cable coming immediately off it is connected to a socket, allowing me to disconnect it if anything goes wrong. The cable for this part is routed into the wardrobe area and then down through the fresh-water access lid which also received a drilling.
How it works:
To turn on the 240v supply I open the app and tap the "AC Output" button, this runs 240v into the kitchen end socket.
I have this set to turn off automatically after a period of idle use.
To recharge I select the max charge setting from the overhead panel in the california, ensure the leasure batteries are at a decent level, then turn on the "car port" switch in the same app which triggers the relay in the DC-DC converter that then recharges the Power Station via the alternator.
When the whole system isn't in use I flipped the isolator under the passenger seat to disconnect the alternator cable from the DC-DC converter.
