When I collected my Cali the dealer didn't provide the Cali specific manual but thats a different story. What is the normal closed position for the fresh water drain valve? Handle pointing to left side or towards the front?

The correct position is marked locally (with close scrutiny, by torch light) on my T.6.1.

My understanding is all the valves (fresh tank, waste tank, and gas valve under the hob) work in the same way, when transverse across the van they are closed, and then longitudinal in line with the van they are open.

On every water, (or gas valve) whether it's in your van, boat, house etc. when the handle is in line with the flow, it's open, when it's across the flow, it's closed.

Its hard to see the direction of the tubing in the gas bottle compartment as the valve body is covered. I had a moment of panic when I got a flood of water through the cabin whenever I opened the tap. I had just the tap replaced and thought the dealer had not connected things properly.
Turned out the shower connection had remained open after I used it earlier in the day and water had spewed out whenever the pump activated. Reseated and greased the collar so the ball bearing sealed the outlet. Disaster averted.

I am going to check my shower connection @Corradobrit to understand better the issue you had, and perhaps lubricate my “collar” and “bearing”.
