I saw an ambulance with solar panels today, I guess to keep additional batteries in tip top condition.

Most likely because

1) they park up "in wait" for long periods, presumably with the radio on.
2) They park up with the flashing lights on for a long time during emergencies.

they might have a fridge for some medicines onboard

Great idea

No fridge required for the drugs UK Paramedics carry, but alot of extra electronics for the radio, lights/sirens, and monitoring equipment. So the vehicles I drove were always running out of power!
