Can someone explain to a novice please about weights.

The gross vehicle weight is 3080kg

The unladen weight is 2546kg (with 90% fuel and 1 person)

Does this mean that the max weight of the vehicle with everyone on board with all their stuff must not exceed 3080g.

Is the difference in the numbers what is referred to as payload - ie the extra weight you can add?

My California has just snapped my drain cover into pieces hence my question.

Correct.
 
As WG says this is the overall limits, but there are also maximum axle weights as printed on the label in the passenger door reveal.
These will come into play if you are ever stopped and weighed on a ministry check point.
