Since we also have a coast in order and have added the 3-zone clima afterwards, some explanation as to why we did this.
When we were traveling with a courtesy California last summer, we noticed that the extra pump and more features are a plus to keep the van cool (there is a 'turbo' button as we called it, to cool the van very fast). After traveling for 10 years with our now 30-year-old T4 westfalia without air con, we (we are 4 now) wanted air conditioning. The standard air con at the coast does the job well (marked during a test drive and info from someone who has a coast with standard air con) but there is definitely a difference. At first we also had configured a coast with the standard air con (it was not worth the extra cost to us at the time of ordering), but we did the upgrade afterwards and yes, for the children

The air-con with two pumps is powerful enough that adjustment at the back is not really necessary; for me it is therefore an extra 'fancy' panel that will not be used much (see the mentions of some that the children haven't touched it yet). Info from the man I know with the coast with standard air con: you needs to adjust it on quite strong at the front to keep it cool at the back and it's also slower (one air con pump) but: it works fine (there is a vent at the back like someone mentioned).
So, even after all my words in favour of the expensive 3-zone air con, I suspect that you will be fine with the standard air con because indeed, you do not miss what you do not have
If you can still change it, I'd think twice about it but of course it's all up to you.
There will always be those who don't do the expensive upgrade and find the standard air con adequate, just as there are those who just took that option. Both o.k. for me. Others chose an ocean for the standard two-pump 3-zone air con (and often mention the children and/or dog at the back). Everyone has their reasons for their choices: we chose the coast because I didn't want the electro-hydraulic roof but with the 3-zone air con which works more powerful (and faster) than the standard.
At the moment I don't know about the production and the wait is getting absurdly long (for reasons many times worse than the uncomfortably long wait itself). I also read here that the coasts are pulled forwards; apparently this is not the case, I was told by our dealer. The right-hand drive Californias were presumably pulled forwards... hence the many deliveries to you. In Belgium there is an information stop (already from November last year when the timeline disappeared at MyVolkswagen) although I did hear that letters are sent by the importer about the long waiting times. I'm happy for the people who got their california. Enjoy it!
