Took the advice of some very seasoned travellers and got a small (1.5L) pressure cooker for the van. It's been very successful, not only reducing cooking time, but reducing the amount of water used to cook things and the amount of fuel used to cook.

As an example, 500g of new potatoes used 250ml of water and after a few minutes getting up to pressure on full heat, 2 minutes on low heat.

1.5L is just about enough for two people, 2L might have been a better choice.

Only downside is that they are a bit bulky, but since we cart around a dutch oven as well that was a fairly moot point for us :D
