Welcome.
A little more information is required.N,S,E,W or Central Spain would help.

Hello Jersey Chris. Hope these ideas are useful.
I did a similar trip to Spain last August with my son, who shared the driving.

Suggestion 1: stay off the A-routes as much as poss but adjust your schedule accordingly: max speeds are 80 or 90 Kph and 30 kph in towns/villages.
Suggestion 2: arrange to be at a reasonable-sized village/town at 12 - 1pm and stop for a good cheap lunch.
Between St Malo and Spain, I'd Suggest two campsites:

Near the chateau Chenonceaux, Camping Le Moulin Fort. On the river bank, nice pitches, lovely evening meal restaurant, breakfast and great for kids, etc. https://maps.app.goo.gl/JBqTaVtaGYFuQn3r8

On the N bank of the River Dordogne, Camping Le Garrit: https://maps.app.goo.gl/9RGokDTrYFto4d8A9. They may do an evening meal but we arrived a little late so bought a picnic from local supermarket and set up the chairs and table next to the river. Bliss in the setting sun! Breakfast was available.

In between, have lunch in Bellac at Le Commerce: https://maps.app.goo.gl/of2AxAHhNVdTUecT7 but it got busy quickly.

After the Dordogne stop, our route took us over the Pyrenees to Vielha in Spain. The campsite we used in the French foothills isn't open now so I can't give you a recommendation.

If you plan to go another way over / around the mountains, you can go SW or SE from Agen on the A-route network.

Enjoy your journey.

Those 2 campsites have loads of smaller kids running around and they looked safe to me.
If you dont think you'll enjoy a road pass over the middle of the mountains, aim for the north end (Atlantic) or south end (Med) passes.

We've just come back from a similar trip but we did the return leg too.
I had 2 teenage girls with me to entertain. We drove down the Atlantic coast and stopped at various spots. They both agreed that this place was their favourite:

Just by the massive dune, lovely pool, restaurant, beaches to die for, unreal sunsets.
Though I have to say we left our dog at home because of the searing heat. If I was going with a dog I would be concentrating on forests, rivers and lakes tbh.
