So smash window, climb in, alarm is sounding, turn drivers seat, overcome immobiliser and steering lock and drive away.
It is easier to turn the seat with the door open for sure, @WelshGas. So your advice remains sound regarding turning it. An OBD lock (I have window stickers on four sides, quite discreet but sufficient), and some form of steering lock hopefully adds discouragement, at least in my view.

Its just about possible on a T6.1, slightly different shaped doorcards combined with a more practical smoothish plastic rather than fabric covered.

I have two self adhesive red dots, both sides, one on the sliding seat and the other just below on the fixed part. This make it easy to align & turn avoiding B pillar contact.
